Blueberry and Apple Pie – So Yummy you Just Want More….

Today I decided to use up some ingredients in the fridge and made an Apple and Blueberry Pie,

The pastry for the pie is so easy to make and so yummy to taste.

For the pie pastry i used

200 mil Flour plain

100 gr butter

2-3 table spoon chilled water

touch of salt.

Method : Combine dry ingredients till you have bread crumb like mixture, then add the chilled water little at a time to just bind together.

I like to then place the dough into a plastic wrap or bag and place in the refrigerator till i ready to use it.

Pie filling: for this i wash the berry fruits and cut the apple into bite size pieces then ad 1/2 cup of brown sugar but found it to sweet so next time use 1/4 cup.

then my secret ingredients ? – Ginger and Nutmeg, fresh ginger about 1/4 teaspoon and 1/2 teaspoon of nutmeg mix all together and set aside.

Roll out the pastry bottom, add the fruit mixture then cover with pastry top, don’t forget vent holes , then brush surface with egg wash or milk or as i do i add a little water to the bowl i had the fruit mixture in and get all the bits from the side then brush this over the pie, sprinkle a little granulated sugar over and bake for 40 mins at around 200.

TIP: Left over pastry, roll out and fill with tomato sauce and cheese fold over and crimp it into a pasty like shape and bake same time as the pie, for me that sorted out my lunch lol…
